Homemade Bone Broth | Cheap Easy Healthy

Ingredients for bone brothI’ve been hearing a lot about bone broth lately. How cheap and easy it is to make and the endless health benefits of this nutrient rich food such as a strong immune system and healthy digestion. It also strengthens hair, skin, nails, brain, joints (the list goes on!) and reduces cellulite to boot. This is a perfect way to round out our nutrition allowing us to get important nutrients that we typically do not get such as gelatin, collagen, and the valuable amino acids proline and glycine. So when I found myself with bones from a leftover rotisserie chicken, I figured now was the time to give homemade bone broth a try for myself.

Paleo Mashed Sweet Potatoes

In my house, they’re usually being made for a Sunday night dinner paired with a rotisserie chicken we picked up while making our weekly grocery run. It makes for a quick, easy, and comforting meal.  I typically boil my sweet potatoes in order to speed up the process a bit, because at this point the aroma of the rotisserie chicken has filled up the house and we’re usually ready to pounce! But, if you have the time you could roast them in a 400° oven for about an hour. I tend to keep my recipes simple, but you could experiment by adding some different herbs like rosemary or thyme. These mashed sweet potatoes are so good it’s easy to overdo, so enjoy it but keep in mind moderation in all things!

Scrambled Eggs For a Crowd

Scrambled EggsMy nephew got baptized this past Sunday, and I volunteered to make the scrambled eggs for his Baptism brunch. The reason I initially chose scrambled eggs was because I cook them everyday, and they’re so easy to make. When I first volunteered, I didn’t really think through just how many eggs I would actually have to cook in order to feed everyone. So I got down to calculating… I figured 2-3 eggs per person for about 40 people… That’s somewhere between 80-120 eggs. Holy bajesus! I couldn’t image cracking that many eggs let alone standing at the stovetop while I scrambled them all. So I took the issue to Google. After viewing the first few results, I quickly realized that baking the eggs was the most popular way to efficiently prepare scrambled eggs for a crowd. Baking scrambled eggs sounded crazy to me, but it was a resounding result from Google so I figured I’d better give it a shot.

Paleo Coconut Chicken & Sweet Potato Fries

When we’re in the mood for some serious comfort food, which is usually on the weekend, we automatically turn to this recipe. The texture of the pan fried coconut chicken is reminiscent of my favorite childhood food, chicken tenders, and the oven baked sweet potato fries are a perfect alternative to typical grease-drenched french fries. By breading the chicken in almond flour and shredded coconut, you’re getting an extra dose of macronutrients including healthy carbohydrates, fat, & protein. The best part is, you won’t be feeling any guilt after this meal. So take the time to whip this recipe together, and you will not be sorry! 90 Second Paleo Milkshake

Luckily, with my Paleo Milkshake recipe you can still satisfy your sweet tooth without having to down a sugar-laden dessert. And trust me, I know the sweet tooth can sometimes quickly turn into an emergency situation, but no worries because you can whip this Paleo Milkshake together in just 90 seconds. The frozen bananas here are key. They are the secret behind the sweet flavor as well as the creamy texture. The almond butter and cacao powder blend together so perfectly it will keep you coming back to this recipe time and time again.  A scoop of chocolate protein would be a good substitute for the cacao powder to make this the ultimate post-workout shake. The unsweetened vanilla almond milk is the ideal base, because it gives it a touch of vanilla flavor that takes it over the top. If you don’t have vanilla flavored almond milk, try adding a dash of pure vanilla extract. With only four ingredients, this Paleo Milkshake is something you have got to try. It’s so simple to make, and I promise this creamy, scrumptious Paleo treat will not disappoint your primal palate!
