My friend from college is getting married this July, and I’m her matron of honor! She lives in Delaware, and I, along with a lot of her friends, live in Pittsburgh, so I threw her a bridal shower here a few weeks ago. It was a backyard bbq couples shower, and we had some good old fashioned family fun.
Kale chips are not only simple to make but so healthy too! You only need kale, avocado oil, and salt. I usually make mine with the bagged kale from Trader Joe’s which makes the process even quicker. If you do this, make sure to pick through and take out any thick stems that are in there. If you use fresh kale, you’ll need to trim the leaves off the stem (discard the stems) and give the leaves a rough chop. Preheat your oven to 400°. Lay the kale in a single layer on your baking sheet, drizzle with avocado oil, sprinkle with salt, and give it a toss to blend it all together. It’s very easy to over-oil and over-salt these, so go easy on it, because you don’t need a lot of either. Bake them in your preheated oven for 10 minutes and boom, you’re done! Enjoy as a side to grilled chicken or on it’s own as a snack. It can’t get much easier than that!
California. I’ve always wanted to go. And boy did we go! Jon and I took a California coast road trip and saw 6 places in 7 days. We were only there for one week, but we saw more than most could see in double that time. We didn’t stop the entire time we were there, but that is the type of vacation we like.
Last night we went to Cure in Lawrenceville for my birthday dinner! We’ve been there once before and loved it, so I chose to go back there for my special day. The food here is amazing… Every bite you take is bursting with flavor. I started off with their Punch cocktail made with rum, green tea, strawberry, and honeysuckle. So good!
After several years of a dear friend of mine living abroad with her family in Germany, it was finally time for me to make the trek over to visit. I knew I definitely wanted to visit her while she was there, however I wasn’t sure if it would be possible. Luckily I had a few friends at home that felt the same way. Not knowing how long our friend would be living abroad, we figured it’s now or never to pull the trigger and book our trip. We traveled to 6 different countries in 13 days, so we truly had a Tour of Europe! Read on for our Tour of Europe itinerary plus other details and photos.
