So I told you guys in my last post how obsessed I am with butternut squash, and you’ll see that I am not kidding! I’ve literally been having it at least once a week in some shape or form. Most recently, I created this roasted butternut squash soup and it is soooo good. Warm, comforting, creamy, sweet, silky, delicious… I could go on, but I’ll spare you. The point is that you need to make this soup, like, right now.
