Greetings, hungry readers! This is Meagan from Eat Something Delicious and I'll be taking over for Kylie today. Kylie and I "met" last year when we noticed how much each of our blogs had in common. Simple Roasted Butternut Squash

Paleo Roasted Butternut Squash 1I love this time of year, because winter squash is in season, and right now I’m obsessed with this simple roasted butternut squash. I’ve been making it at least once a week, but I could literally eat this everyday. It’s creamy, sweet and melts in your mouth. The butter coats the squash and gives it a caramelized finish that is to die for. I like to pair it with my maple glazed pulled pork for a savory comfort meal. I could also see pairing this alongside chili or a sloppy joe. Yum, I’m getting hungry just writing this! This simple roasted butternut squash is an easy side dish that pairs with just about anything. I like to prep the squash (peel and cut) before work in the morning, so that I can just toss it into the oven when I get home. The best is when I have meat cooking in the crock pot, because I have an amazing meal ready in what feels like lickety-split. You’ll notice onions in the photos, but I’ve realized since then that I like this better with just the butternut squash by itself. I will update the photo just as soon as I can get a picture before it all gets eaten!

The texture of the pan fried coconut chicken is reminiscent of my favorite childhood food, chicken tenders, and the oven baked sweet potato fries are a perfect alternative to typical grease-drenched french fries. By breading the chicken in almond flour and shredded coconut, you’re getting an extra dose of macronutrients including healthy carbohydrates, fat, & protein.
